Stone crabs are my favorite Florida specialty. I prefer mine dipped in melted butter, but many natives eat them with a cold mustard sauce. Stone crabs are a sustainable seafood choice because typically just one claw is harvested. The crab is then released, with one claw remaining with which to defend itself while its other claw regrows.
Stone crab season runs from October 15-May 15 of each year. Get ’em while you can!
